Topic 1: Dino?
Many people think o' yoshis as dinosaurs. But, have you ever noticed the long tongue? And how their eyes bulge out? This shows signs o' a frog. Perhaps a cross-breed occured, resulting in the race Yoshi.

Topic 2: The Wondrous Eggs
The yoshi eggs have always mysteriously followed the parent. Maybe they are psychicly attached. Or, the eggs could be stringed one by one by some thin, clear, sticky substance.
The eggs are made super-fast. This is prob'ly 'cuz the yoshis don't need many nutrients, and so the digestive system is fast. They eat a lot, and this is most likely a result o' not getting enough o' the proper nutrients from one meal, perhaps because the stuff they need are rare. So then, the egg comes out with the excess things in with the very young yoshi, giving it a meal to eat. The eggs can also be used from leftovers that weren't prossessed out, as seen in Super Smash Brothers.

Topic 3: Is a Birdo a Female Yoshi?
Play Mario Tennis for Nintendo 64. Go and select Yoshi. Hold down and watch as the player rapidly changes. See the similarities? Also, they both have the instincts to use eggs as weapons. You've never seen a male birdo, and that could be because they're yoshis.

Topic 4: Saddles and Shoes at Birth
How did yoshis grow that saddle and shoes? Perhaps they've been used for a long time for riding, thus developing a natural saddle. As for shoes, maybe the yoshis' feet are just to gentle for the tough terrain they travel, so they grew shoes.
